This Tahini recipe is tangy and fresh with the addition of lime juice, smokey and flavorful with the addition of cumin spice, lightened up and thinned with a little water, seasoned with a little salt. The simplest ingredients ever, yet create the best sauce ever.
Tahini is a prominent ingredient in the Middle East which is trending now! So YAAY for us, we love it! Let’s get to what it is and more about it below.
What is Tahini / Tahina?
Tahini is also called Tahina in many Middle Eastern countries, and in brief tahini is simply sesame seeds butter. Just think of it as your peanut butter or sunflower seed butter, but instead of nuts it’s just sesame seeds.
So it’s a paste of white sesame seeds. There are often times where you’ll find fancier versions like toasted sesame tahini. But for the most part it’s just pure sesame seeds ground in to paste.
So like any seed or nut butter, you need to give it a mix because there’s a layer of oil form the seeds. Also the bottom part of your jar will be thicker so it’s always best to mix the jar.
Tahini itself dates back thousands of years across the Levant, Eastern Mediterranean and parts of North Africa and the Middle East. Sesame seeds were prized because they:
- stored well
- produced nutrient dense paste
- added richness without dairy
Tahini sauce evolved as cooks learned to emulsify sesame paste into lighter sauces for grilled meats, falafel, veggies (cauliflower, eggplant and more vegetables) , grain dishes and shawarma.

Tahini sauce is the sauce you make using the tahina or tahini paste. So it’s a sesame based emulsified sauce made by transforming tahini paste with water, lemon or lime and seasoning into a smooth, creamy condiment used throughout Mediterranean and Middle Eastern cuisines.
What makes tahini sauce remarkable is that it changes completely during preparation. Tahini paste on its own is dense, oily, and concentrated. But once liquid and acid are introduced correctly, it lightens into a sauce that feels:
- silky
- pourable
- airy
- and deeply nutty with balanced brightness

Many people associate it as that secret mysterious ingredient that is used in hummus, which is true, and this ultimate hummus dip is proof.
Aside form that, the paste is also used in baking recipes to add natural good fats. I don’t have a recipe on my blog yet, but I will soon! Because the paste is so creamy, it makes tasty cookies, cakes, brownies and other desserts!
Since it’s basically ground sesame, it is in fact a tad bland if you try it on its’ own. That’s why we jazz it up into a sauce with simple seasonings.

It tastes like a creamy, nutty base with a tangy zesty hint of lemon, and smoky from the cumin.

Tahini:
- Good tahini should be smooth, pourable when stirred, nutty and lightly toasted and not aggressively bitter
- Avoid tahini that is chalky, separated excessively or harsh or burnt tasting

- lighter sesame created a milder tahini sauce
- darker roasted sesame offers a deeper bitterness
Lemons and Water
Fresh lemon juice is critical for brightness, and water creates the sauce consistency.
Seasoning
Salt, black pepper (optional), and essentially cumin. Ground cumin is an essential seasoning for tahini especially in Egypt and Egyptian food.
Because this delight of a paste is pure magic, it goes from paste to silky sauce with just water! The sky’s the limit to how you finish off your sauce.
How To Make Homemade Tahini Sauce?
Think of it like peanut butter or your almond butters. You’ll need to process sesame seeds until you get a paste like consistency. It may take a while, and require a heavy duty food processor. So it’s best of you can find it at your grocery store.
You’ll start with the sesame paste, and water. The mixture will look curdled and you’ll feel like you messed it up! That’s ok, keep whisking until it becomes smooth once again, which I assure you it will.
Then the basic things to add are lemon/lime juice, a touch of cumin and some salt. Whisk more and adjust the thickness/thinness of your sauce using water. Life’s simple pleasures!
That’s the basic sauce recipe, however the sky’s your limit to flavoring it.
Why Tahini Turns Thick First
Acid interacts with proteins and particles in the paste, temporarily tightening the structure before it relaxes into an emulsion.
Why Some Tahini Sauces Taste Bitter
Causes include poor quality tahini, overly roasted sesame seeds, adding too much garlic or too much acid.
What Can you Add to Tahini Sauce?
- crushed garlic or ginger
- Minced green chilies or jalapenos
- minced herbs like mint, dill, fresh parsley or cilantro. These make the popular “green tahini sauce”.
- chilli powder, cayenne or chilli flakes.
However, today’s perfect sauce recipe is the basic simplest yet most divine in my opinion! It’s the way you’ll find it in countries like Turkey, where it’s a THING!
Your sauce can be stored in an airtight container in the fridge for 2 weeks and taste just as luscious! It does however thicken up so make sure you add a touch of water before serving 🙂

Perfect Tahini Sauce
This perfect tahini sauce recipe is the perfect addition to any meal. It’s rich and luscious from the tahini paste, made tangy and fresh with the addition of lime juice, made smokey and flavorful with the addition of cumin spice.
Ingredients
- 1/2 cup tahini paste
- 2 Tablespoons lime juice ( a really big juicy one, or use a full lime if not that juicy)
- 1/2 teaspoon salt (or to taste)
- 1/4 cup water cold
- 1/2 teaspoon cumin
Instructions

In a bowl whisk the tahini with lime juice and salt. You will notice a change in texture and body of the tahini paste.

thin it our with water to your desired consistency, the 3 Tablespoons water will make a thick sauce.

Whisk the water and add the cumin at the end and which it in.

taste and adjust salt, cumin or more lime to your taste.

Then adjust thickness to your taste, add more water if you need to thin it out and add more tahini paste if you need to thicken it out.

Hey Nicole–you are right! I love it best with lime, but I often make it with lemon when I run out–hence the photo! But either one works well, the limes are a bit tangier and have no seeds which makes life easier. 🙂
I am getting tahini sauce from two different places the tahini tastes the same from both places excellent flavor, and I swear they are using liquid smoke?? but I don’t know for sure. but the sauce is the best cant get better they know what their doing. and it is thin (runny)
Are you buying tahini sauce or tahini paste? The tahini paste itself (the one used to make the sauce) does not have liquid smoke for sure, but if you’re busying a sauce that’s ready made then maybe they added it to the sauce. Try to find tahini paste (that’s pure ground sesame seeds–like peanut butter, only made using sesame) and make the sauce on your own 🙂

Hi LynAnn, you should find it at large grocery stores and online for sure. At the grocery store, I think either in the condiments aisle or ethnic foods aisle–in all cases, if you ask a store rep. it would be easier to locate it.
