Cinnamon Rolls Muffins

Ingredients

Wet ingredients:

  • 3/4 cup sugar
  • 1 egg
  • 1/3 cup oil
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

Dry ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt

Cinnamon sugar mix:

  • 1/4 cup granulated sugar
  • 2 teaspoons cinnamon
  • 2 tablespoons melted butter
  • 1/4 cups crushed nuts (optional)

Glaze

  • homemade caramel sauce
  • cream cheese icing

Instructions

  1. Preheat your oven to 375 degrees.
  2. Line a 12 cup standard muffin pan with baking paper and set aside.

  3. In a small bowl mix the cinnamon sugar ingredients and set aside.

  4. In a large bowl, mix the wet ingredients using a whisk until all ingredients are well blended.
  5. In a smaller bowl, whisk the dry ingredients together.
  6. Add the dry ingredients into the wet ingredients and using a rubber spatula, gently mix the batter together, do not over mix it and do not worry about some lumps in the batter.
  7. Using a tablespoon measure, place 2 tablespoons of batter at the bottom of each muffin cup, top with a teaspoon of cinnamon sugar mix and then top with a tablespoon more of batter.

  8. Bake for 18 minutes until done
  9. While still warm glaze with homemade caramel sauce and cream cheese icing

Recipe Notes

  • Tips for the Best Cinnamon Roll Muffins

    1. Chopped nuts are optional, but they add a nice crunch to the cinnamon streusel mix. I recommend pecans, almonds or walnuts!
    2. Do not overmix the batter or your cinnamon rolls muffins won't end up as light and fluffy as they could be.
    3. For the ultimate cinnamon roll experience, glaze the muffins with the icing while still warm. Enjoy them immediately!

    You can store them in an airtight container on the counter and they keep  fresh for 3 days.

    Can I make a cinnamon swirl?

    To make the cinnamon swirl, add the cinnamon sugar mix last thing to the batter. Carefully swirl them with a spatula without fully blending it. Then scoop and bake.
