Make the Romesco Sauce by adding all ingredients in a blender or food processor.
Process the ingredients until saucy and smooth or slightly chunky, to your taste.
Season and adjust seasoning if needed, then set aside.
Preheat a heavy duty skillet with the oil and butter.
Season the lamb shanks well on both sides, pressing down the seasoning on the meat,
Add the chops to the hot skillet and then add the garlic and herbs.
Cook the chops for 2 minutes before flipping.
After flipping, drop the heat to medium and continue cooking the lamb chops for another 4 minutes.
During the 4 minutes, make sure to continuously baste the tops of the chops with butter from the skillet.
The chops are ready when the internal temperature is about 145 degrees F.
To serve the dish, spread a layer of the romesco sauce.
Top with the lamb chops on one side, and air fryer asparagus on the other side.
Dollop some basil pesto over the chops.
Sprinkle with parmesan cheese, some coarse black pepper and chilli flakes if needed.

Start with fresh and quality American lamb, it makes a difference to your recipe! It also makes a huge difference to buy local and support local.
The marbling in the chops is great for tenderness, even if you trim some exterior fat off.
This recipe is super straight forward and requires no marinades or waiting time. So make sure once again you use superior lamb for it!
Make the Romesco sauce 2 days in advance to save some time and keep it in the fridge. To serve, simply reheat it in the microwave for 1 minute to reach room temperature.
Use a combo of oil and butter to cook the lamb chops. The flavour of butter is what makes it succulent and tasty. While the oil will ensure that the butter doesn’t burn.
A heavy duty cast iron is best to sear meats and lamb chops, or a stainless steel skillet.
Avoid flipping the chops too soon.
Add the aromatics of your choice, and make sure they’re whole. Avoid mincing or finely dicing, as they may burn before the chops have cooked.
The lamb chops cook in about 5-7 minutes total, depending on the thickness of the chops.
