Truffle Fries

There’s something irresistibly luxurious about Truffle Fries. Golden, crispy French fries tossed in fragrant truffle oil, sprinkled with Parmesan, garlic and fresh herbs. Ingredients

Fries

  • 4 cups Frozen Fries

Truffle

  • 1 1/2 Tablespoon Truffle Oil blend of dark and light

Topping

  • 1/2 teaspoon salt and pepper
  • 1 cup Parmesan cheese grated
  • 2 Tablespoon parsley minced
  • 1 clove garlic minced
  • 1/4 teaspoon chilli flakes optional

Instructions

  1. If using fresh potatoes for fries from scratch, start by washing the potatoes.  You can peel the potatoes (optional), and cut them into ¼-inch sticks. Soak in cold water for at least 30 minutes to remove excess starch.
  2. Otherwise use your favorite store bought frozen fries.

  4. Deep-Frying: Use a neutral oil and fry until the potatoes are golden brown. Drain excess oil.
  5. Bake: Line a baking sheet with parchment paper and season the potatoes, coat in olive oil. Now bake the cut potatoes at 425 degrees F for 30 minutes shaking halfway. Cooking times are different depending on the size of your potatoes.
  6. Truffle Flavor

  7. Now for the utmost truffle flavor, pour the truffle oil over the hot cooked fries in a large bowl.

  8. Toss well.
  9. In a bowl, mix the garlic, parmesan and fresh parsley.

  10. Toss half of the parmesan mixture into the bowl of homemade fries.

  11. Shake well.
  12. Garnish the plate with the remaining Parmesan mix and it's READY!

Tips for Homemade Truffle Fries

  1. Make the fries the way you like them. If making from scratch, don’t skip soaking the potatoes as it eemoves starch for maximum crispiness.
  2. Add truffle oil last when the potatoes have cooked. Heat can reduce the aroma of truffle oil and ruin the taste.
  3. Less is more! Too much truffle oil can overpower the dish, so use a faint amount, just enough to taste it.
  4. Use quality oil for this recipe and try both light and dark to choose your favorite.
  5. You can substitute truffle salt for the oil.
  6. Serve immediately, fries are best eaten hot.
