Hot Honey

Hot Honey is the new hot sauce trend, and we couldn’t agree more! It’s the perfect balance of sweet and spicy, with a sticky texture, and perfect for drizzling over pizza, fried chicken, veggies, salmon and more!

Ingredients

  • 1 1/2 cups Honey
  • 2-3 Tablespoons chili flakes
  • 2 teaspoons Apple Cider Vinegar

Instructions

  1. In a saucepan over medium heat, add the honey

  3. Cook the chili flakes and honey just enough that the mixture simmers but doesn't boil.

  4. At this point, remove the saucepan from the heat and add in the vinegar.

  5. Let the hot honey cool slightly before pouring it into a jar.

  6. Once the hot honey sauce is cooled completely, then you can seal the jar and store it.

Pro Tips for Hot Honey Sauce 

  1. The honey you chose will have a predominant flavor on the final hot honey recipe, so if you have a certain type of honey, start with that.
  2. Always use liquid honey.
  3. Dried chili flakes are optimal as they have no moisture.
  4. Similarly the type of chili flakes you use will affect the flavor of spice, heat level and any smokey taste for the sauce. 
  5. When making hot honey recipe, avoid boiling the nmixture, just bring it a gentle simmer with the chili flakes and take if off the heat right away. 
  6. Avoid boiling honey because high heat destroys flavor and nutrients.
  7. Heat intensity varies by chili type; start mild and taste as you go.
  8. Blend honey types or add more chilis for variation.
  9. Honey can react with metals over time, so always use glass jars.
  10. A vinegar is needed to balance the sweet and spicy with a slight tang, but also to stabilize the sauce. If you don’t want a strong vinegary taste to your sauce, use apple cider vinegar as we did here.

  • Garlic Hot Honey: Infuse minced garlic with chilis.
  • Smoky Hot Honey: Add smoked paprika or chipotle chili.
  • Citrus Hot Honey: Add orange or lemon zest for brightness.
  • Maple-Hot Honey: Combine honey and maple syrup for a richer glaze.

What is The Heat Scale To Make Hot Honey Recipe?

  • Mild: 1–2 chili flakes per 1/4 cup honey
  • Medium: 2–3 small fresh or dried chilis
  • Hot: 3–5 Thai bird’s eye or arbol chilis
  • Extra Hot: Mix arbol, bird’s eye  and cayenne

Honey Selection Tips

Always use good-quality honey because this is the base. There are so many different types of honey and this depends o the bees and environment. Honey has so many health benefits so either way no matter what type, it's a great choice. Here's how the type of honey affects your sauce:

  • Raw honey /unpasteurized adds maximum  flavor
  • Light honey (clover, acacia) is used for subtle sweetness
  • Dark honey (buckwheat) for rich, molasses notes
  • Vegan alternative: Use maple syrup or agave with chili

Storage and Shelf Life

  • Room temperature: Up to 1 month in a sealed jar.
  • Refrigeration: Not necessary, but can extend shelf life to 2–3 months.
  • Avoid moisture: Water can ferment honey.

Does Hot honey need to be refrigerated?

This is the most common question I get. No hot honey doesn’t need to be refrigerated at all. It’s best to store the sauce in a jar, seal the jar once the sauce has cooled completely, and keep it at room temperature in your pantry.

How long does hot honey last?

The beauty of this sauce is that it can last for up to 6-8 months at room temperature. There’s nothing that can make it go bad. So make as much as you like!

Can I use Fresh chilies?

It’s best to avoid fresh chilies as they contain moisture and will alter the sauce texture and shelf life. If you have fresh chilies however (even jalapeños) , then you need to make my grandpa’s famous Hot Pepper Sauce! You’ll LOVE it!

Is hot honey very spicy?

If using regular chili flakes, you’ll find that it's not as spicy as you expect it to be! It’s rather a balance of sweet with a hint of spice. However, if you use hot pepper flakes like scotch bonnet flakes, then you can expect a higher level of spice for sure!

My Hot Honey is Too Spicy

Dilute it with more honey, mix it well, taste and for a richer taste, add in some butter too.

My Hot Honey Isn't Spicy Enough

Add in more chilis, gradually and taste as you go. Alternatively, use a more high heat sale type of pepper.

My Hot Honey is Crystallized

Simply warm the hot honey in a small sauce pan over medium low heat until it's smooth again.

The Hot Honey Coating won't stick

Hot honey may harden depending on the storage temperature you have at home, so just warm a bit before drizzling. 

Can hot honey be used on desserts?

Absolutely YES!  try it on ice cream, yogurt, or baked goods. Also use it for drinks!
